Two Villages

One Domain


Based in Meursault, Domaine Henri Boillot is strategically placed between Puligny-Montrachet and Volnay, the two appellations that have become its specialty. The domain has set itself a firm objective: to express, through its wines, the essence of the vines and their distinctive climates.


​The soil of Puligny Montrachet is brown limestone, or limestone alternating with clay. This can be deep and occasionally goes right down to the solid rock. The clay loam is thicker on the upper slopes, but lighter lower down.

Volnay is mainly limestone and schist. These factors, combined with the altitude of the vineyards - between 230 and 280 metres - result in wines that have concentrated aromas and a unique finesse.

Combining their distinct personalities, father and son work together on the domain. Both make great wines: Henri the whites, Guillaume the reds.

Henri Boillot is the purposeful, passionate founder of the domain, which he steers firmly to the highest standards. His strong work ethic and dedication have resulted in an exacting, well-run domain, which he is proud to pass on to the next generation. His present focus is devoted to his precise, elegant white wines.

Having worked his way up the echelons to head of viticulture, Guillaume is now in charge of the red wines at the domain. He has subtly wrought his own style into the vinification process, revealing the very best of the terroirs, especially in Volnay. His emphasis on sensitivity, and the pleasure he takes in his work, can be felt in his wines, which are full, rounded, sensual and fine.

Two Centuries


1885

The domain was established by Henri Boillot's grandfather at the beginning of the twentieth century.

'The Boillot family began to make wine in the early 1900s. My grandfather, Henri, was the first to exploit the vines that belonged to the family; then my father, Jean, went on to expand the domain.'

'I came on board in 1975, after working my way up the ladder, which is essential in a family-run domain. I became responsible for the winery as a whole. In 1995, I started my negociant business.

In 2000, we built the cellars and winery in Meursault. In 2005, I suceeded in keeping the domain whole by buying out my brother and sister.'

'My son, Guillaume, joined the domain in 2008. In 2011, we extended the cellars and buildings in Meursault, and acquired some vines in Puligny-Montrachet, notably in the Batard appellation. In 2012, Guillaume became the head of viticulture, and took over the vinification of our red wines.'

The making of a great wine starts at the vine. Dedicated care and constant attention is required at each stage of growth, from the very first cut of the secateur. Throughout the year, we tend to our vines with utmost precision.

Le sol

We interfere with the growing process as little as possible, and only a select few are permitted access to the vines. We established this philosophy of non-intervention as early as the 1990s, making the domain a forerunner in a practice that has since become widespread.

Being attuned to the environment of the vines is primordial. Recently, we have shifted our focus on finding ways to help them withstand climatic changes. At other times, milder winters meant adapting to changes in the growing cycles of the plant. The winemakers' role is to help the plant to adapt to the varying seasons, every year. 'A vine remembers; if you mistreat it, you will suffer the consequences: low yields; years of negligible production.'

Ageing requires a lot of care, with as little interference as possible. We must make our presence known in the winery - the casks can feel it; sometimes the gentlest of attentions is all that is needed.

Through an emphasis on traditional methods of vinification and ageing, Domaine Boillot highlights both its terroir and the distinct personality of its winemakers: two essential ingredients for making complex, charismatic wines.
